A Taste of Japan on the South Coast

So for just over 6 months now I’ve been living in Brighton, literally a stone’s throw from the beach. I thought that was the luckiest part, but since my move I’ve discovered the real reason why I’m so lucky. I live next door (well 1 street away) to possibly the UK’s best Japanese restaurant. This is not my musing but so it seems, the entire south coast. With a 3-month waiting list and barely room for 2 guests at each table, it’s proving to be much more. After the said 3 months wait, finally last weekend, I managed to get my late timeslot table at 9pm with a friend at the counter.

Bincho Yakitori is a culinary gem that brings the authentic flavours of Japanese yakitori to the vibrant food scene of Brighton. This restaurant offers a dining experience that combines traditional Japanese grilling techniques with a modern, stylish and moody setting.

The open kitchen allows diners to watch the skilled chefs at work, grilling skewers over binchotan charcoal, which adds to the immersive experience. The lighting is soft and intimate, making it an ideal spot for both casual dinners and special occasions.

The menu is based around yakitori, which are skewers of grilled meat, seafood, and vegetables. The star of the show is undoubtedly the chicken skewers, which come in various cuts, including thigh, breast, and even more adventurous options like chicken heart and liver. Each skewer is expertly seasoned and grilled to perfection, resulting in a smoky, flavourful bite that is simply irresistible.

Overall, it was a meal I can’t wait to get on the waiting list again for. How lucky am I.
